Bread - Banana Bread
Like the rest of the world, I made my share of banana bread during the Pandemic. But, really, I began making this loaf decades ago. In fact, it was the very first thing I learned to make shortly after we married in 1990. The recipe is from one of our wedding gifts, “The Southern Living Cookbook”. It’s so easy and delicious! Every time I make it, the smell takes me back to those early days, learning to bake and cook and a sweet time in our lives.
Banana Bread
Ingredients
1 3/4 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1 1/4 tsp cream of tartar
2 eggs, beaten
1/2 vegetable oil ( I also use coconut oil instead sometimes)
2 ripe bananas, mashed
350 degrees
I also add fresh grated ginger, a dash of cinnamon & nutmeg, a tsp of vanilla and sometimes chopped nuts (pecans or walnuts- as much as you like)
combine first 5 ingredients in large bowl, make a well in center of mixture, combine remaining ingredients and add to dry mixture, stirring until moistened.
pour batter into a greased (I use parchment paper) 9x5x3” loaf pan, bake at 350 degrees for 45 minutes, cool in pan for 10 minutes, remove from pan and let cool on wire rack
I love to spread Nutella or peanut butter on slices but it’s yummy plain, too!
