Food - Tostadas
I have recently found these versatile crunchy tortillas save the day, time and time again. They can be topped with just about anything. When I don’t know what to make for dinner or aren’t craving anything in particular, if I have these little round gems, dinner is sorted. Or breakfast. Or lunch. I found these at Walmart and if you handle them with care in your buggy, at check-out and in the car, they will stay in one piece, for the most part. They do tend to break easily. I store them by themselves on a top pantry shelf. They’re fun to eat as a hand-held bite, and super quick to put together with spreads and toppings.
“what’s in the fridge” version
I try to be resourceful and I hate to waste food, especially with the cost of groceries these days. These are yummy and economical!
simple, speedy guac: smashed avocado, lime juice, salt & pepper, garlic powder

fresh shredded cheddar
pickled red onion: 1/2 cup apple cider vinegar, 1 tbsp honey, 1 tsp salt, 1 small red onion thinly sliced…in small pot, bring cider, vinegar and salt to boil, place onions in a bowl and slowly pour hot liquid mixture over them, let cool, store in glass jar in fridge.

I’ve also used leftover bbq, rotisserie chicken, taco-seasoned ground beef, fried egg, sour cream, any herb, crispy shallots, and green onions. Red pepper hummus, black beans or fresh corn would also be scrumptious. Just top with what you like and enjoy a delicious, fast, colorful meal!
